22、Like people, plants experience stress. And also, like people, the response to that stress can determine success.
Bad environmental conditions, such as drought, flood, heat and other stresses, affect yields (产量) more than crop pests and diseases. We are trying to find a way to equip plants with the ability to tolerate environmental stress and maintain high yields, said Stephen Howell, a professor of genetics and cell biology.
Plant cells produce proteins (蛋白质) and ship them to different parts of the cell. Under normal conditions, these proteins are folded into their normal, healthy structures as they are produced. When a plant is under stress, its cells produce poorly folded or unfolded proteins. Then a built-in system senses this and “sets off an alarm in the cell,” said Howell.
In response to the alarm, another protein (IRE1) starts working and creates a different process which activates (激活) the stress response genes whose products bring about defensive measures that help the plant survive.
“As it turns out, responses that are activated under stress conditions actually inhibit the growth of plants,” said Howell. “This allows them to preserve their energy to survive the stress conditions.”
For plants in the wild, this response is a help for survival, he said. In production of agriculture crops, however, this response reduces yields.
“You don’t want crop plants to stop growing,” Howell said. “You want them to continue to grow and produce even though they are under stress.”
With the new understanding of this stress response, the next step may be to silence the alarm system, said Howell. “What may be important is to disable some of these stress responses. That may make the plant more productive under stress conditions.”

23、We live in the age of envy. Career envy, kitchen envy, children envy, food envy, holiday envy. You name it, there’s an envy for it. Human beings have always felt what Aristotle defined in the fourth century BC as pain at the sight of another’s good fortune. And those comparisons are now much less realistic, Andrew continues: “We all know that images can be filtered, that people are presenting the very best take on their lives.” We carry our envy amplification device around in our pockets, we sleep with it next to our pillows, and it tempts us 24 hours a day, the moment we wake up even if it is the middle of the night. “What I notice is that most of us can intellectualize what we see on social media platforms — we know that these images and narratives that are presented aren’t real, we can talk about it and rationalize it — but on an emotional level, it’s still pushing buttons. If those images or narratives tap into what we desire, but what we don’t have, then it becomes very powerful.”
No age group or social class is immune from envy, according to Andrew. In her consulting room she sees young women, self-conscious about how they look, who begin to follow certain accounts to find hair inspiration or makeup techniques, and end up envying the women they follow and feeling even worse about themselves. But she also sees the same pattern among older businessmen and women who start out looking for strategies and tips on social media websites, and then struggle to accept what they find, which is that some people seem to be more successful than they are. “Equally, it can be friends and family who bring out those feelings of envy, around looks, lifestyle, careers and parenting — because somebody is always doing it better on social media,” she says.

24、 Technically, many of the healthy foods we eat are processed, but not in the way you might think. For example, if you have a Mason jar full of organic dried beans, you have processed food in your fridge. Frozen vegetables are processed, even if you picked the vegetables from your garden, blanched (焯水) them and put them the fridge. The moment you blanched them, you processed them. When we say we shouldn’t eat processed foods, what we really mean is ultra-processed foods.
What are ultra-processed foods? If I made flatbread at home, I would make it with materials like flour, yeast, milk, butter and salt. I keep whole-grain flatbread in my freezer because it deteriorates quickly. Healthy meals for sure. But I normally buy them from the grocery store, and while the brand I buy contains almost the same materials as a homemade version, it also includes the dextrose, type of sugar, and some other additives (添加剂). Then it can be called an ultra-processed one.
If we ate ultra-processed foods only occasionally, it wouldn’t be as big of a problem. However, researchers indicated that almost 58% of the calories Americans consume are from ultra-processed foods. A study found people who increased their daily intake of ultra-processed food by 10% increased their risk of developing overall cancer by 12% and breast cancer by 11%.
While the study didn’t identify the exact reason why ultra-processed foods cause a higher risk of cancer, researchers did have several theories. One theory is that the foods contain high levels of salt, sugar and fat. Those materials have been linked to overweight, which can also lead to a greater risk of cancer. A second theory is that some ultra-processed foods contain certain additives that lead to cancers. Also another theory is high temperatures used to process the food can create newly formed pollutant. Finally, bpa (Bisphenol A) is commonly used in food packaging and can leak into the food.
While further studies are needed to know the exact reasons why ultra-processed foods can have such an impact on health, it’s safe to say that the consequences of eating them outweigh the benefits.
