  • 22、Tempeh, a traditional soy product from Indonesia, is hailed as the country’s “gift to the world,” like kimchi from Korea or miso from Japan.

    A stable, cheap source of protein in Indonesia for centuries, tempeh is a fermented (发酵的) food originating from the island of Java. It was discovered during tofu production when discarded soybean residue caught microbial spores from the air and grew certain whitish fungi around it. When this fermented residue (残渣) was found to be edible and tasty, people began producing it at home for daily consumption across the country. This has given rise to many variations in its flavor and texture throughout different Indonesian regions.

    Tempeh is high in protein and low in fat, and contains a host of vitamins. In fact, it is the only reported plant-based source of vitamin B12. Apart from being able to help reduce cholesterol (胆固醇), increase bone density, and promote muscle recovery, tempeh has a lot of polyphenols that protect skin cells and slow down the aging process. Best of all, with the same protein quality as meat and the ability to take on many flavors and textures, tempeh is a great meat substitute —something the vegetarian and vegan communities have been quick in adopting.

    In addition to its highly nutritional makeup, tempeh has diverse preparation possibilities. It can be served as a main course (usually in curries) or a side dish to be eaten with rice, as a deep-fried snack, or even blended into smoothies and healthy juices. Though not yet a popular food among international diners, you may find tempeh-substituted BLTs (bacon, lettuce, tomato sandwiches) in San Francisco as easily as you can find vegetarian burgers with tempeh patties in Bali.

    For the people of Indonesia, tempeh is not just food but also has cultural value. With the Indonesian traditional fabric batik (蜡染) being recognized by UNESCO as “Intangible Cultural Heritage of Humanity,” tempeh has great potential for this honor as well.

  • 23、In 2016, inspired by a challenge called the “16 for 16”, where a mother gave her daughter $1,600 when she turned 16 if she stayed off social media, Lorna Klefsaas decided to up the ante (赌注) to two extra years and $200 more for her son, Sivert Klefsaas.

  • 24、   Teens and preteens who start the school day really early tend to weigh slightly more than those who start later. That’s the finding of a new study of nearly 30, 000 Canadians between the ages of 10 and 18. These data are the latest evidence that starting school too early can harm health.

    “We know from earlier studies that when school starts too early, kids can’t get the sleep they need,” says Genevieve Gariepy. She works at Mcgill University in Montreal, Canada. Getting too little sleep can put kids at risk for a number of problems. Sleepy teens are more likely to be overweight, to have trouble concentrating and to struggle in school. They also are at higher risk of feeling depressed, using alcohol or drugs and getting in car accidents.

    As an epidemiologist (流行病学家), Gariepy is interested in patterns of disease. She studies teen obesityor extreme overweight. In this studyshe wanted to know how earlier school start times might be linked to weight.

    “Overweight and obesity in adolescents is a big problem in North America,” she says. The number of overweight kids has grown over the past 30 years. About one in three U. S. and Canadian teens are now overweight or obese. Kids who don’t sleep enough may be at higher risk. So Gariepy decided to find more about the impact of school start times.

    Her team collected start times of 362 Canadian schools and found that among “6 to 10” graders, those who started school earlier tended to be slightly heavier for their height. Every 10-minute delay in school start time was linked, on average, to a slightly lower weight among students who were the same sex, age and height. But it’s not clear that changing school start time would help heavier kids lose weight.
